Green Beans With Mint Recipe
Ingredients :3 tablespoons olive oil & margarine, mixed
1 cup tomato juice or sauce
1 lbs fresh beans, trimmed, cut
1 tablespoon chopped fresh parsley
2 potatoes, peeled, sliced
2 tablespoons fresh mint, chopped
Heat oil in a pan and add tomato juice or sauce. Stir. Add green beans and parsley in to the pan with enough water to almost cover. Tuck the potato slices in between. Partially cover the pan, and simmer for 25 minutes.
Stir and season with salt, pepper and 2 tablespoons chopped mint. Cook uncovered until the beans and potatoes are tender or about 10 more minutes. Sprinkle with a little additional fresh mint and serve warm.
